What is Sambal?

Sambal, pronounced sum-bul, is an Indonesian chilli mixture that has a very special spot in almost every Indonesian's heart.  It can be served as a condiment, a side dish, a main dish, a dip, and even served with fruit.  

Essentially, sambal is a mixture of chillies and other traditional Indonesian produce and spices.  Just as there are many different sub-cultures or ethnic groups in Indonesia, there are many varieties of sambal, each made famous by the area it hails from as they use various local ingredients and the intensity ranges from mild to extremely hot.
